TOAST

So it’s been a while since I posted here, though it’s not for lack of things to write about. First things first: this one is for all the RPCVs from Morocco who know what I mean when I say Toast. A beautiful spring day and a visit from a fellow volunteer were all the inspiration necessary to try our hand at recreating the best breakfast in Rabat and the best deal in Morocco at the warmest, loveliest eatery in North Africa. For the uninitiated, you start with an ordinary slice of bread and add a layer of cheese, a touch of oil, and an egg over easy…and you end up with comfort food heaven.

start with a lightly toasted, generously buttered slice of bread

add cheese and herbs of choice
fry up an egg per slice
place your lightly cooked egg atop your cheesy toast, cook it a bit more in the toaster oven, add s+p to taste and enjoy!!
