Today’s Most Successful Recipe is a cold chickpea salad, perfect for summertime.
Ingredients:
15.5 oz. can of chickpeas, drained and rinsed
1 tomato, diced
¼ red onion, chopped
2-3 cloves of garlic, roughly chopped
Juice of one lemon
1.5-2 oz. goat cheese, preferably at room temperature
1-2 T olive oil
1 T honey
A large bunch of cilantro, a medium bunch of parsley, and a small bunch of mint, chopped very finely
Salt, pepper, paprika, and cumin to taste
Preparation:
Chop the onion and garlic and place in a small bowl with the lemon juice. Let it sit for 10 minutes or so; the lemon juice will take some of the edge off the raw onion and garlic.
In a larger bowl, layer the chickpeas on the bottom and then add dollops of goat cheese, followed by the tomato, herbs, olive oil, and honey. Add the onion, garlic, and lemon juice last.
Season to taste with salt, pepper, paprika, and cumin. Serve chilled.
