shall i imbibe thee on a summer’s day? a moroccan g&t

It happened while I was cooking a Moroccan lemon chicken (forthcoming) for some friends and searching for something cool to drink. There was no chilled wine and no beer but there was tonic water and gin. The rest is history.

Moroccan Gin & Tonic

This is a recipe for one. Multiplying is pretty straightforward. Tonight, on the eve of my departure, I’m making a whole pitcher for some (new) guests. I’ll let you know how it goes.

You’ll need:

Gin
Tonic water
Thin slice of preserved lemon
1-2 mint leaves
Mint syrup (I make my own with a big bunch mint leaves infused with water and sugar and reduced, but you can buy it too)

I use about 2 oz each of gin and syrup (roughly a shot glass full) then add the lemon and mint and fill the glass up to the top with tonic water before stirring.
