I love sandwiches. Sandwiches are great for breakfast, lunch and dinner.
My favorite sandwich of late arose, like a beautiful sandwich-shaped phoenix, from the ashes of a dinner party and an overzealous trip to the farmer’s market that left me with lots of leftover Moroccan chicken, blackberry & lemon thyme jam, and fresh spicy arugula. Perfect.

Leftover Chicken and Arugula Sandwich
All you need is:
Some nice sliced bread
Lots of leftover chicken (cleared of bones and grizzled bits)
A sweet spread, like a jam, jelly, or chutney (mmm I love me some chutney)
Some fresh greens – arugula adds a nice kick, but use whatever you’ve got (pile them sooooo high and you’ll basically be eating a salad except that it will taste instead like chicken. everybody wins!)


Now I’m hungry!
